The Singular Patagonia, Puerto Bories Hotel focuses special attention on local products, preparing unique dishes that highlight the region’s heritage. We work to put on the table only the purest essence of Chilean Patagonia, starting with the first meal of the day enjoyed with an exclusive view of the Canal Señoret to the best handcrafted cocktails accompanied by vistas of pure nature. The Singular Restaurant celebrates the mountain ridges of Seno Última Esperanza, with award-winning cuisine from our Executive Chef, Hernán Basso, fusing French trends with locally sourced ingredients. At El Asador, a delectable selection of cuts of meat or local fish, traditional Chilean dishes and grilled vegetables can be enjoyed in a historic and rustic atmosphere of the property's 100-year-old former blacksmith's forge, honoring the wild spirit of Patagonia.
Our menu highlights dishes constructed using a bounty of Patagonia-sourced ingredients such a guanaco, king crab, rhubarb or austral hake, prepared with classic techniques in a rustic and elegant setting overlooking the breathtaking austral fjords.

With rustic and historic style, the infrastructure at El Asador preserves the façade of the nineteenth century, transforming the setting into a gastronomic space where the tastes of fine grilled and typical dishes of the area are the main attraction for our gourmand clients.
At El Asador we specialize in wood-fired meats, but also feature a vegan option. Skirt steak, a lamb steak, a ribeye... all are cooked to perfection on a fired grill. The sides included an assortment of local vegetables. Any trip to Patagonia would not be complete without living out this epicurean experience.... don’t miss one of area’s best kept treasures.
Asador is not open permanently during the season. Available for private events and groups only.
